Ñuke Puma 52" Argentine Gaucho Grill with Santa Maria Control Wheel

An Argentine asado runs on embers, not flames. You burn hardwood or lump charcoal down to glowing coals, then rake them under the meat. The Ñuke Puma, handmade by artisans in Argentina, is built for exactly that. A heavy brazier basket at one end holds the burning wood. As it breaks down, the embers fall through, and you pull them onto the refractory-brick floor under the grate with the included poker and shovel.

Heat is controlled by height, not by vents. Turn the Santa Maria-style wheel to raise or lower the grate anywhere from 4 to 23 inches above the coals: close for a hard sear on skirt steak and chorizo, high for slow short ribs or a whole chicken. The V-shaped grates channel fat away from the fire, which prevents flare-ups and keeps that dripping fat available for basting. A cast-iron plancha fits over the brazier for vegetables, provoleta or eggs.

The body combines high-grade stainless cooking surfaces with 11-gauge carbon steel, on a wheeled cart with accessory hooks. A cover is included.
